The invention relates to a method of removing the fibrous shells from cereal grains. This method according to the invention comprises a pretreatment step, wherein the moisture content of the cereal grains is increased, e.g. in the case of corn grains from 16 to more than 20 % by weight, followed by the step of exposure of the pretreated grains to a thermal shock by means of a cold- transfer medium, such as a cryogenic medium and thereafter mechanical treatment step thereof.

L'invention se rapporte à un procédé destiné à enlever les gousses fibreuses de grains céréaliers. Le procédé de l'invention comprend une étape de prétraitement dans laquelle la teneur en humidité des grains céréaliers est accrue (dans le cas des grains de maïs, cette teneur passe de 16 à plus de 20 % en poids), suivie d'une étape dans laquelle les grains prétraités sont exposés à un choc thermique au moyen d'un milieu de transfert à froid, tel qu'un milieu cryogénique. Cette étape est suivie d'une étape de traitement mécanique.
