A method of selecting a barley variety which comprises: the heat treatment step of subjecting crude enzyme solutions extracted from the barely seeds to a heat treatment (for example, 57.5~C for 30 minutes); the activity measurement step of measuring the .beta.-amylase enzymatic activity of the heat-treated crude enzyme solutions; and the selection step of selecting a barley variety containing .beta.-amylase which shows a residual activity of from 85 to 90% in the activity measurement described above.
L'invention concerne un procédé de sélection d'une variété d'orge, qui consiste à: soumettre des solutions d'enzymes brutes extraites des germes d'orge à un traitement thermique (par exemple à une température de 57,5· C pendant 30 minutes); mesurer l'activité enzymatique bêta-amylase des solutions d'enzymes brutes traitées thermiquement; et sélectionner une variété d'orge contenant la bêta-amylase, qui présente une activité résiduelle de 85 à 90 % sur l'échelle de mesure d'activité ci-décrite.
