Several studies have demonstrated that bovine whey produced by cheese maker industry contains several bioactive factors promoting health and preventing disease. Although many efforts have been made over the years to show that immunoglobulins, lactoperoxidase, lactoferrin, lysosyme and small peptides present in whey have antimicrobial activities against several pathogenic microorganisms, such activity has not been investigated so far for the lipid fraction of whey. There, is disclosed a method of inhibiting the germination of Candida albicans using free fatty acids derived from whey cream. Further fractionation by HPLC demonstrates that this activity can be mainly attributed to lauric, myristoleic, linoleic and arachidonic acids.
Plusieurs études ont montré que le lactosérum de bovin produit par l'industrie fromagère renferme plusieurs facteurs bioactifs favorables pour la santé et la prévention des maladies. Même si, au fil des années, on a consacré beaucoup d'efforts à démontrer que les immunoglobulines, la lactoperoxydase, la lactoferrine, le lysosyme et les petits peptides présents dans le lactosérum possèdent une activité antimocrobienne efficace contre plusieurs microorganismes pathogènes, cette activité n'a pas encore été étudiée dans la fraction lipidique du lactosérum. On présente donc une méthode permettant d'inhiber la germination de Candida albicans à l'aide d'acides gras libres dérivés de crème de lactosérum. Le fractionnement subséquent par CLHP montre que cette activité est principalement attribuable aux acides laurique, myristoléique, linoléique et arachidonique.
