The present invention relates to methods for altering the fatty acid composition in milk or tissue fat directly derived from a milk producing ruminant. The methods consist of administering to said milk producing ruminant a suitable amount of a chemical compound selected from the vitamin E family, or a structurally or functionally related compound or derivative thereof. At high doses, vitamin E influences ruminal biohydrogenation and allows the production of milk or tissue fat with a highly desirable fatty acid profile: high trans-11 C~18:1, high cis-9, trans-11 C~18:2 (CLA), low trans-10 C~18:1. Methods are disclosed to obtain said desirable fatty acid profile, thereby improving the nutritional benefits to human health associated with CLA. Milk and tissue fat obtained by said methods are also disclosed. Dietary intakes of cis-9, trans-11 C~18:2 CLA and trans-11 C~18:1 fatty acids in milk or meat, or products thereof, produced in accordance with the present invention in ruminant animals, can be effective in preventing cancer in different sites, reduce risk of coronary heart disease and to enhance immune function.

L'invention concerne des procédés de modification de la composition d'acides gras dans le lait ou le gras tissulaire directement dérivé d'un ruminant laitier. Les procédés consistent à administrer audit ruminant laitier une quantité adéquate d'un composé chimique sélectionné dans la famille de la vitamine E, ou un composé structurellement ou fonctionnellement associé ou un dérivé de ce dernier. A des doses élevées, la vitamine E influence la biohydrogénation ruminale et permet la production de lait ou de gras tissulaire avec un profil d'acides gras idéal : C18:1 trans -11 élevé, cis</i>-9 élevé, C18:2 trans -11 (CLA), C18:1 trans -10 faible. L'invention concerne des procédés visant à obtenir ce profil d'acides gras idéal, ce qui améliore les bienfaits nutritionnels pour l'homme, associés aux CLA. L'invention concerne en outre le lait et le gras tissulaire obtenus selon ces procédés. Les apports alimentaires des acides gras cis -9, C18:2 trans -11 CLA et C18:1 trans -11 dans le lait ou la viande, ou des produits de ces derniers, produits conformément à la présente invention par le ruminant, peuvent être efficaces dans la prévention du cancer dans différentes zones, réduire le risque de maladies cardiaques coronariennes et améliorer la fonction immunitaire.
