The present invention includes methods and devices for mass producing cooked, cooled egg products having a grill fried egg appearance. One device includes a portion for positioning whole, intact, shelled eggs positioned laterally across and above a cooking mold conveyor, and a portion for cracking the eggshells and depositing the eggs into cooking molds on the conveyor. Some devices and methods include an egg yolk splitter for rupturing the egg yolk sac to deposit a whole egg having a ruptured egg yolk into each mold. Other devices and methods include irregular shaped egg molds (186) for providing a mass produced cooked egg having a natural, irregular shaped outlines and/or surfaces. Devices and methods according to the present invention can be used to produce irregular, outlined shaped cooked egg products including whole eggs, formulated eggs, or eggs made from scrambled egg mixes.The present invention includes methods and devices for mass producing cooked, cooled egg products having a grill fried egg appearance. The pre-cooked eggs can be delivered pathogen free to fast food establishments and reheated for consumers in less time than required to cook the egg.

L'invention concerne des procédés et des dispositifs pour la production en série de produits d'oeufs cuits, refroidis, ayant l'aspect d'oeufs poêlés. Un dispositif comprend une section pour positionner les oeufs entiers intacts en coquille, positionnés latéralement transversalement et au-dessus d'un transporteur de matrice de cuisson et une section pour craqueler les coquilles d'oeufs et déposer les oeufs dans les matrices de cuisson sur le transporteur. Selon certains dispositifs et procédés, il est prévu un séparateur de jaune d'oeuf pour séparer le sac vitellin et déposer un oeuf entier à sac vitellin rompu dans chaque matrice. Selon d'autres dispositifs et procédés, il est prévu des matrices pour oeufs de formes irrégulières pour obtenir un oeuf cuit produit en série présentant des contours et/ou surfaces d'aspect naturel et de forme irrégulière. Des dispositifs et des procédés selon l'invention peuvent être utilisés pour produire des produits d'oeufs cuits, de forme détourée et irrégulière, y compris des oeufs entiers, des oeufs formulés ou des oeufs produits à partir de mélanges d'oeufs brouillés. Les oeufs précuits peuvent être fournis exempts d'agents pathogène à des établissements de restauration rapide et être réchauffés pour des consommateurs, en moins de temps qu'il ne le faut pour cuire un oeuf.
