An improved system for providing an individually customized fresh brewed coffee beverage on demand by a customer, in a wide range of variety and strength. Said brewing system for making relatively large quantities of fresh brewed coffee beverages (in particular, customized as to desired variety, body, character and/or strengths), as chosen by multiple individual consumers just prior to their consumption. Said system is easy to use by the consumer or other individual (e.g., restaurant wait staff) obtaining the customized beverage. Further, maintenance of the equipment requires only a small amount of personal attention by the owner/operator of the equipment. A general object of the present invention is to utilize "delayed dilution' of a concentrated extract to provide a beverage brewing system which immediately (upon customer selection) provides selective dilution (based on individual consumer's selections) of a fresh-brewed coffee extract after the extract has been allowed to brew and held as an extract before dilution. It is also a general object of the present invention to utilize the undiluted extract to mix and dissolve other beverage compounds to make flavored coffees, cappuccinos, lanes, and the like. "Delayed mixing" and/or "delayed filtering" may also be utilized.

L'invention concerne un système amélioré permettant de préparer, à la demande du consommateur, une boisson du type café frais personnalisée, en fonction d'une large palette de variétés et de robustesses. Ledit système est destiné à la préparation de quantités de boissons du type café relativement grandes (notamment, personnalisées en fonction de critères tels que la variété, le corps, le caractère et/ou la robustesse), selon le choix de plusieurs consommateurs individuels, et juste avant la consommation. Ledit système est facile à utiliser par le consommateur ou tout autre individu (par exemple, le personnel de service d'un restaurant) souhaitant obtenir la boisson personnalisée. En outre, l'entretien du matériel ne demande que peu d'attention de la part du détenteur/utilisateur de l'appareil. L'objet général de la présente invention est d'utiliser la "dilution différée" d'un extrait concentré pour réaliser un système de préparation de boissons permettant d'obtenir immédiatement (selon le choix du client) des dilutions sélectives (sur la base de la sélection effectuée par chacun des consommateurs) d'un extrait de café frais <u>après</u> avoir laissé infuser ledit extrait et l'avoir conservé sous la forme d'un extrait avant la dilution. La présente invention a également pour objet général l'utilisation de l'extrait non dilué pour le mélange et la dissolution d'autres composés de la boisson, en vue de la préparation de cafés aromatisés, de cappuccinos, de cafés au lait, et analogue. On peut également avoir recours au "mélange différé" et/ou au "filtrage différé".
