The present invention relates to novel methods for stabilizing aqueous deacylation, via use of buffers in the production of sucralose. The present invention provides a process for producing sucralose from an acyl-sucralose compound whereby the acyl-sucralose compound is deacylated in the presence of a buffering agent, which stabilizes the pH of the feed mixture and decreases the accumulation of undesired anhydro compounds. Further, the present invention provides a process whereby the acyl-sucralose compound is deacylated directly either prior to or after removal of the tertiary amide reaction vehicle from the neutralized chlorination feed mixture. An aqueous solution of sucralose including salts and other compounds is produced, from which sucralose is recovered by extraction and purified by crystallization.
La présente invention concerne de nouveaux procédés qui permettent de stabiliser la déacylation aqueuse par l'utilisation de tampons dans la production de sucralose. L'invention se rapporte à un procédé qui permet de produire du sucralose à partir d'un composé acyl-sucralose, selon lequel le composé acyl-sucralose est déacylé en présence d'un agent tampon qui stabilise le pH du mélange de charge et réduit l'accumulation des composés anhydro non désirés. L'invention concerne en outre un procédé qui permet de déacyler un composé acyl-sucralose juste avant ou juste après que le véhicule amide tertiaire de la réaction a été retiré du mélange de charge neutralisé de la chloration. On obtient de la sorte une solution aqueuse de sucralose comprenant des sels et d'autres composés, à partir de laquelle le sucralose est récupéré par extraction et purifié par cristallisation.
