A method of controlling, reducing, or eliminating microorganisms including, but not limited to, fungi and bacteria associated with hygiene, food spoilage, and human pathogenesis on food surfaces after the foods have been packaged is achieved by exposing the microorganisms to a source of pulsed ultraviolet radiation through transmissible packaging. The duration of the pulses of ultraviolet radiation are in the range of picoseconds to microseconds at about 1 mJ/cm2 to about 10 J/cm2. Total energy irradiance is controlled in the case of foods with limited tolerance to such exposure.

L'invention concerne un procédé de lutte contre les micro-organismes, de réduction ou d'élimination de ceux-ci, entre autres, de champignons et de bactéries associés à l'hygiène, à l'altération des aliments, et à la pathogénie humaine sur des surfaces d'aliments après conditionnement de ces derniers par exposition des micro-organismes à un rayonnement UV pulsé à travers un conditionnement laissant passer le rayonnement UV. La durée des impulsions de rayonnement UV se situe dans la plage allant des picosecondes aux microsecondes à environ 1 mJ/cm?2¿ jusqu'à environ 10 J/cm?2¿. L'éclairement énergétique total est régulé lorsque les aliments traités présentent une tolérance limitée à ladite exposition.
