A method for predicting late fermentation production of diacetyl in a brewing process comprises determining the ratio of FAN (free amino nitrogen content) to sugar (fermentable) to gravity in an initial wort composition. In addition there is provided a process for preventing incipient late fermentation production of diacetyl in a brewing process, comprising measuring and variously adjusting the initial FAN, sugar and gravity of the wort such that the ratio (I), (g f.sug/g FAN/~P) for the adjusted wort has a value of 37 or less.
L'invention concerne une méthode permettant de prédire une production de fermentation tardive de diacétyle dans un procédé de brassage consistant à déterminer le rapport de FAN (contenu exempt d'azote aminé) par rapport au sucre (fermentable) et par rapport à la gravité, dans une composition de moût initiale. L'invention concerne également un procédé permettant d'empêcher le démarrage de la production de fermentation tardive de diacétyle dans un procédé de brassage, consistant à mesurer et à régler de manière variable la valeur initiale du FAN, du sucre et de la gravité du moût, de sorte que le rapport de formule (I) pour le moût réglé présente une valeur inférieure ou égale à 37.
