The present invention relates to a biphasic microalgae extract comprising 15- 95 wt.% of an aqueous phase and 5-85 wt.% of an oil phase, said extract containing at least 1% by weight of total fatty acids of .omega.3-fatty acids selected from the group consisting of eicosapentaenoic acid (EPA), docosahexaenoic acid (DHA) and combinations thereof, said extract further being characterized in that it contains: .cndot. 40-100% by weight of the oil phase of lipids selected from triglycerides, diglycerides, monoglycerides, phosphatides, free fatty acids and combinations thereof; .cndot. 0.01-10% of carotenoids by weight of the oil phase; .cndot. 0.5-10% of sodium chloride by weight of the aqueous phase; .cndot. 0-3 wt.% of non-dissolved material other than dispersed droplets of aqueous phase or oil phase; and .cndot. 0-10% of C1-5 monoalcohol by weight of the aqueous phase. Together the aqueous phase and oil phase of the biphasic extract contain essentially all the lipid material that was originally contained in the microalgae biomass, i.e. both apolar lipids (e.g. triglycerides, free fatty acids) and polar lipids (e.g. glycolipids, phospholipids). The invention also provides processes for extracting an oil phase from wet biomass of micro-organisms. These processes do not require the use of apolar organic solvents and produce a biphasic extract that can easily be downstream processed to produce .omega.3- PUFA containing oil in high yield.

La présente invention concerne un extrait biphasique de micro-algues comportant entre 15 et 95% en poids dune phase aqueuse et entre 5 et 85% en poids dune phase huileuse, ledit extrait contenant au moins 1% en poids de poids total dacides gras dacides gras de type oméga 3 choisis parmi le groupe constitué de lacide eicosapentaénoïque (EPA), de lacide docosahexaénoïque (DHA), et des combinaisons de ceux-ci. Ledit extrait est également caractérisé en ce quil contient: 40-100% en poids de la phase huileuse de lipides sélectionnés parmi les triglycérides, diglycérides, monoglycérides, phosphatides, acides gras libres et des combinaisons de ceux-ci ; 0,01-10% de caroténoïdes de la phase huileuse ; 0,5-10% en poids de chlorure de sodium de la phase aqueuse ; 0-3% en poids de matière non dissoute autre que des gouttelettes dispersées de phase aqueuse ou de phase huileuse ; et 0-10% en poids de mono-alcool C1-C5 de la phase aqueuse. Conjointement la phase aqueuse et la phase huileuse contiennent essentiellement toute la matière lipidique contenue à lorigine dans la biomasse de micro-algues, cest-à-dire, des lipides apolaires (par exemple, des triglycérides, des acides gras libres) et des lipides polaires (par exemple, des glycolipides, des phospholipides). Linvention concerne également des procédés permettant lextraction dune phase huileuse à partir de biomasse humide de micro-organismes. Ces procédés ne nécessitent pas lutilisation de solvants organiques apolaires et produisent un extrait biphasique qui peut être transformé facilement ultérieurement pour produire des acides gras polyinsaturés de type oméga 3 contenant de lhuile en très grande quantité.
