Methods of processing four-legged slaughter animals for consumption as meat and/or meat product(s) are described. The methods comprise: I) contacting exterior surfaces of the live animal at least once with a microbiocidal solution formed from mixing together at least (i) water and (ii) at least one 1,3-dibromo-5,5-dialkylhydantoin, such contacting occurring at least once when the animal is en route to being slaughtered but before it is killed by exsanguination; or II) contacting the carcass of the animal, after exsanguination, with a microbiocidal solution formed from mixing together at least (i) water and (ii) at least one 1,3~-dibromo-5,5-dialkylhydantoin or III) contacting at least one raw meat product and/or at least one processed meat product derived from the carcass. The contacting can be done one or more times in each of I), II), and III). Considerable advantages, which are described, are realized when using such methods.
La présente invention se rapporte à des procédés de transformation d'animaux de boucherie quadrupèdes destinés à être consommés sous forme de viande ou de produits carnés. Les procédés selon l'invention consistent : (I) à mettre les surface extérieures de l'animal vivant au moins une fois en contact avec une solution microbicide que l'on obtient en mélangeant ensemble au moins (i) de l'eau et (ii) au moins une 1,3-dibromo-5,5-dialkylhydantoïne, une telle mise en contact étant effectuée au moins une fois lorsque l'animal est en route vers l'abattage mais avant qu'il soit tué par exsanguination ; ou (II) à mettre la carcasse de l'animal, après exsanguination, en contact avec une solution microbicide que l'on obtient en mélangeant ensemble au moins (i) de l'eau et (ii) au moins une 1,3-dibromo-5,5-dialkylhydantoïne ; ou (III) à mettre au moins un produit carné cru et/ou au moins un produit carné transformé dérivés de la carcasse en contact avec une telle solution microbicide. A chacune des étapes (I), (II) et (III), la mise en contact peut être réalisée une ou plusieurs fois. Le recours à de tels procédés offre des avantages considérables, qui sont énumérés dans le descriptif de l'invention.
