It is intended to provide a milk-coagulating enzyme originating in a bacterium and a process for producing cheese by using this enzyme. Namely, an enzyme which is produced by a bacterium belonging to the genus Paenibacillus sp. and has an activity of coagulating milk, characterized by having the following enzymological properties: (1) function: having an activity of coagulating milk to form a curd; (2) substrate specificity: acting on .kappa.-casein as a substrate and specifically cleaving Thr94-Met95 in the presence of calcium; (3) optimum pH: 6.0 to 7.0; and (4) molecular weight: 35,000 to 37,000 Da when measured by SDS-PAGE; a process for producing the enzyme; a process for producing cheese; and a cheese-like food product.

L'invention concerne une enzyme de coagulation du lait provenant d'une bactérie et un procédé de fabrication de fromage à l'aide de cette enzyme. Cette enzyme, qui est produite par une bactérie du genre Paenibacillus sp.,présente une activité de coagulation du lait et se caractérise par les propriétés enzymologiques suivantes : (1) fonction : activité de coagulation du lait donnant naissance à un caillé ; (2) spécificité du substrat : action sur la caséine K comme substrat et spécifiquement, clivage de Thr94-Met 95 en présence de calcium ; (3) pH optimum : 6.0 à 7,0 ; et (4) poids moléculaire : 35 000 à 37 000 Da mesuré selon SDS-PAGE. L'invention concerne également un procédé d'obtention de cette enzyme, une méthode de fabrication du fromage et une denrée alimentaire de type fromage.
