The heterofermentative lactic acid bacteria are selected from Lactobacillus buchneri or Lactobacillus brevis, the homofermentative lactic acid bacteria is Lactobacillus plantarum. The ratio of viable cells of the homofermentative to heterofermentative lactic acid bacteria ranges from 1:5 to 1:15. Cultures of Lactobacillus buchneri provided are ATCC PTA-2493, ATCC PTA-2494 or ATCC PTA-2495.
