The present invention relates to a method for manufacturing modified polysaccharides comprising of placing the polysaccharide in contact with a sugar group-transferring enzyme and a sugar group donor. The placing of the polysaccharide in contact with a sugar group-transferring enzyme and a sugar group donor can be effected in vivo as well as in vitro. The result of the method is modified polysaccharides which can be used for different food and non-food applications.

Cette invention a trait à un procédé de production de polysaccharides modifiés consistant à mettre le polysaccharide en contact avec une enzyme de transfert de groupe saccharose et un donneur de groupe saccharose. Il est possible de procéder à cette mise en contact du polysaccharide avec une enzyme de transfert de groupe saccharose et un donneur de groupe saccharose aussi bien in vivo que in vitro. On obtient, de la sorte, des polysaccharides modifiés que l'on peut utiliser dans le cadre de diverses applications alimentaires et non alimentaires.
