Plants, particularly cereal plants which have modifications to their starch synthesising pathway contain a DNA specifying the enzyme soluble starch synthase which has the sequence SEQ ID NO 1 or SEQ ID NO 2 or SEQ ID NO 3. The inserted gene may be inserted in a sense or anti-sense construct. The alteration introduced by the inserted genes may be a greater or reduced ability to produce starch or starch which has a different fine structure such as a different pattern of branching.

Des végétaux et plus spécifiquement des plantes céréalières présentant des modifications de leur mécanisme de synthèse de l'amidon contiennent un ADN qui spécifie la synthase de l'amidon soluble enzymatique dont la séquence est SEQ ID No1, SEQ ID No2 ou SEQ ID No3. Le gène inséré peut être inséré dans un produit de recombinaison sens ou anti-sens. L'altération induite par les gènes introduits peut être une aptitude renforcée ou réduite à produire de l'amidon, ou de l'amidon qui possède une structure fine différente telle qu'une structure de ramification différente.
