The present invention provides a water-soluble modified gum arabic with a weight average molecular weight not less than 0.9 million and arabinogalactan protein not less than 17% by weight obtained by heating Acacia senegal gum arabic and modified water-soluble gum arabic with a weight average molecular weight not less than 2.5 million and with protein containing high molecular weight components of not less than 25% by weight. Moreover, the present invention provides modified gum arabic with standardized and predictable molecular properties and methods for providing the modified gum arabic endowed with high emulsification efficiency and stability and for uniforming natural variations in unmodified gum arabic. The present invention changes the natural protein distribution of gum arabic, and increases AGP content.
La présente invention se rapporte à une gomme arabique modifiée hydrosoluble, possédant une masse moléculaire moyenne en poids non inférieure à 0,9 million, et des protéines d'arabinogalactane ne représentant pas moins de 17 % poids. L'on obtient ladite gomme arabique en chauffant une gomme arabique de Acacia senegal et une gomme arabique hydrosoluble modifiée possédant une masse moléculaire moyenne en poids non inférieure à 2,5 million et des composants à masse moléculaire élevée contenant des protéines, lesquels représentent au moins 25 % poids. De plus, l'invention concerne une gomme arabique modifiée qui présente des propriétés moléculaires normalisées et prévisibles, ainsi que des procédés permettant de produire une gomme arabique modifiée dotée d'une haute efficacité d'émulsification et d'une stabilité élevée, et d'uniformiser les variations naturelles observées dans la gomme arabique non modifiée. La présente invention modifie la distribution naturelle des protéines de la gomme arabique, et augmente la teneur en protéines d'arabinogalactane.
