Malto-oligosaccharide (MOS) content of cells (particularly plants cells) is modulated, resulting in alterated .alpha.-glucan (e.g. starch) production by the cells. Granule Bound Starch Synthase I (GBSSI) activity in production of unbranched .alpha.-glucan, such as amylose, and branched .alpha.-glucan, such as amylopectin, is modified by modulating MOS content.
Selon l'invention, on module la teneur en malto-oligosaccharide (MOS) de cellules (notamment de cellules végétales), ce qui résulte en une production modifiée d'.alpha.-glucane (par exemple l'amidon) par les cellules.
