Disclosed is a water-soluble highly-branched polydextrose wherein the linkage 1 ? 6 predominates, having average molecular weight between 1,500 and 18,000 and containing from about 0.01 to 0.3 mol percent of citric acid bound in the form of ester groups; a process for preparing the polydextrose by melting dextrose containing 0.5 to 3 mol percent of citric acid at elevated temperature at reduced pressure while removing water and then passing a concentrated aqueous solution of the product through an adsorbent resin or a weakly acidic ion exchange resin and recover- ing the polydextrose substantially free of water; and a food stuff containing the polydextrose. The polydextrose is sweet and has less bitter taste than that of prior art.
