Methods and compositions are provided for controlling the level of toxic metabolites in plants before, during and/or after harvest and/or processing. The invention finds use for reducing the health risk associated with the consumption products such as tobacco, cereal grain feeds, processed grain products such as corn syrup, citrus fruits, underground vegetables, fruit vegetables, flower, leafy and stem vegetables, and cut flowers, and for improving laboratory animal testing procedures by controlling the level of mycotoxins associated with the materials that colonize toxin producing microorganisms. Compositions for controlling mycotoxin-producing fungi comprise cinnemaic aldehyde, conferyl aldehyde or derivatives thereof having formula (I) wherein R1 represents -CHO, R2 represents -OH or an organic substituent comprising 1-10 carbon atoms, R3 represents -OCH3 or an organic substituent comprising 1-10 carbon atoms and R4 represents -H or an organic substituent comprising 1-10 carbon atoms.

L'invention concerne des méthodes et des compositions qui permettent de contrôler le niveau des métabolites toxiques dans les produits d'origine végétale, pendant et/ou après la récolte et/ou le traitement. Ces moyens permettent de réduire les risques sanitaires liés à l'utilisation de produits de consommation tels que le tabac, les céréales utilisées pour l'alimentation, les produits traités à base de céréales comme le sirop de maïs, ou bien encore les agrumes, les tubercules, les fruits et légumes, les fleurs, les légumes à feuilles et à tiges ou les fleurs coupées, et aussi d'améliorer les procédures de contrôle des animaux en laboratoire, en vérifiant le niveau des mycotoxines associées aux substances qui s'établissent dans les microorganismes producteurs de toxines. Les compositions qui permettent de contrôler les micromycètes producteurs de mycotoxines comprennent l'aldéhyde cinnamique, l'aldéhyde conférylique ou leurs dérivés, selon la formule (I). Dans ladite formule, R¿1? est -CHO, R¿2? est -OH ou un substituant organique comportant de 1 à 10 atomes de carbone, R¿3? est -OCH¿3? ou un substituant organique comportant de 1 à 10 atomes de carbone, et R¿4? est -H ou un substituant organique comportant de 1 à 10 atomes de carbone.
