The present invention relates to isolated polynucleotides encoding cysteine proteinases; cysteine proteinase inhibitors; and aspartic endoproteinases.The invention also relates to a transformed host cell, preferably a plant cell, in which over- or under- expression of these polynucleotides result in altered levels of coffee flavour precursor levels, specifically, amino group- containing molecules such as amino acids, peptides and proteins, in green coffee grains.

La présente invention concerne des polynucléotides isolés codant pour des cystéine protéinases, des inhibiteurs de cystéine protéinases, et des endoprotéinases aspartiques. L'invention concerne aussi une cellule hôte modifiée, de préférence une cellule végétale, dans laquelle la sur-expression ou la sous-expression de ces polynucléotides, se traduit par des taux modifiés de précurseurs de la saveur du café, de façon spécifique des molécules contenant des groupes amino tels que des acides aminés, des peptides et des protéines, contenus dans des grains de café vert.
