MOISTURE BARRIER AND ITS PREPARATION ABSTRACT An edible moisture barrier film comprises droplets of lipid component (74-95% of the film) dispersed in an edible biopolymer (26-5 wt% of the film). The total water content of the film is less than 5 wt%. The films can be made from emulsions which are cast and then dried.
