A process for the production of a molded aerated frozen bar which comprises preparing a mix of ingredients suitable for a frozen aerated bar, whipping the mix to obtain an aerated mix having an overrun of from 20 to 250 %, molding the aerated mix to give a molded aerated mix and freezing the molded aerated mix. Average size of air cells is less than 50 microns.

Un procédé de production d'une barre glacée moulée et aérée consiste à préparer un mélange d'ingrédients convenant à une barre glacée aérée, à fouetter le mélange pour obtenir un mélange aéré présentant un foisonnement de 20 à 250 %, à mouler le mélange aéré pour obtenir un mélange moulé et aéré puis à congeler le mélange moulé et aéré. La grosseur moyenne des alvéoles d'air est inférieure à 50 microns.
