The invention provides a dried enhanced-solubility milk protein concentrate (MPC) containing at least one monovalent salt added prior to drying. Methods for preparing this product are provided. These include a method comprising (a) providing an MPC having at least 70% dry matter as milk protein in aqueous solution/suspension (b) adding at least one monovalent salt in an amount that confers enhanced solubility on the product when dried and (c) drying the product. The enhanced-solubility MPC may be used in cheese manufacture.
L'invention concerne un concentré de protéine de lait séché à solubilité améliorée (MPC) contenant au moins un sel monovalent ajouté avant le séchage. L'invention concerne en outre des procédés de préparation du produit consistant à (a) fournir un MPC ayant au moins 70 % de matière sèche sous forme de protéine de lait dans une solution/suspension aqueuse, (b) ajouter leur sel monovalent selon une quantité conférant une meilleure solubilité au produit séché et (c) sécher le produit. Le MPC à solubilité améliorée convient à la fabrication du fromage.
