MULTI-STATE COUNTER-CURRENT CONCENTRATING SYSTEM AND METHOD ABSTRACT A system and method for concentrating aqueous beverages, such as fruit juices, beer, wine, vinegar, tea, coffee, and the like in which a slurry of feed liquid and seed crystals is formed in a scraped surface heat exchanger (36,37,38;204,206,208,210) of a first stage (20) and supplied to a recrystallizer (22,216) where larger crystals grow, the liquid in the recrystallizer (22) being withdrawn with part recirculated to the heat exchanger (70,72;232,234,236) of a succeeding stage. The slurry of larger crystals in the recrystallizer (22, 216) of the first stage (20) is also withdrawn and the crystals separated in a wash column (34; 216). The larger crystals grown in the second stage recrystallizer (74; 230) are supplied to the recrystallizer (22; 216) of the first stage where the seed crystals melt and reform on the larger crystals and the larger crystals from the third stage (24) are similarly supplied to the recrystal- lizer (74; 230) of the second stage (22).
