An ergonomically-designed, multipurpose knife having a handle, a blade with a shank and a tip, and a fastener for attaching the handle to the shank. The blade has a curved outer edge extending substantially from the shank to the tip, with an integrally-formed gut hook positioned near the shank and opening toward the tip. A portion of the outer edge is sharpened to form a cutting edge. The fastener is user-operable for moving the blade from a first operating position where it opposes the handle to a second operating position where it extends forward of the handle for use as a hatchet. In the first position, force exerted on the handle and directed toward the blade is distributed approximately uniformly along the entire length of the outer cutting edge. Skinning cuts are made by grasping the handle and pivoting the wrist to produce controlled strokes approximately in the plane of the blade; chopping and slicing cuts are made by pivoting the wrist to rock the knife about an axis transverse to the plane of the blade. The user can control the length and direction of a cut by pivoting the wrist alone, the forearm at the elbow, the entire arm from the hand gripping the knife to the shoulder, or by pushing or pulling the knife with the hand and forearm, or any combination thereof. Range of motion, dexterity and control of the cutting edge are thereby improved, with greater comfort than is possible with a conventional knife.
Cette invention concerne un couteau ergonomique à usages multiples, formé d'un manche, d'une lame terminée à un bout par une pointe et à l'autre bout par une soie, et d'un moyen de fixation de la soie au manche. La lame comporte un tranchant courbe faisant sensiblement toute la longueur entre la pointe et la soie et un crochet d'éviscération façonné à même à proximité de la soie et ouvrant vers la pointe de la lame. Le moyen de fixation permet à l'utilisateur de déplacer la lame d'une première position de travail où elle est repliée contre le manche à une seconde position de travail où elle se trouve dans le prolongement du manche et peut servir de hachette. Dans la première position, la force exercée sur la lame par l'intermédiaire du manche en direction du tranchant est à peu près uniformément répartie sur toute la longueur du couteau. Pour dépouiller un animal, l'utilisateur manie le couteau par le manche en pivotant le poignet de manière contrôlée pour couper à peu près dans le plan de la lame. Pour réaliser des tranches, il doit pivoter le poignet dans un plan perpendiculaire à la lame du couteau. Pour déterminer la longueur et la direction de la coupe, l'utilisateur peut pivoter le poignet seulement, l'avant-bras, le bras tout entier ou pousser ou tirer le couteau de la main et de l'avant-bras ou mettre en oeuvre une combinaison quelconque des mouvements ci-dessus. Le couteau permet une amplitude de mouvement, une dextérité et une maîtrise du tranchant améliorées tout en offrant un confort accru par rapport aux couteaux classiques.
