Use of cationic surfactants, derived from the condensation of fatty acids and esterified dibasic amino acids, of the formula (I): occasionally leads to a bitter taste, when the compound is present in a large concentration. L'invention porte sur l'utilisation de surfactants cationiques, tirés de la condensation d'acides gras et d'acides aminés dibasiques estérifiés de formule (I) qui peuvent donner un goût amer lorsque le composé est présent en forte concentration.
