ABSTRACT OF THE DISCLOSURE A noncorrosive aqueous composition for cleaning a heated surface subject to soiling with food soils while maintaining the surface at a temperature greater than about 275°F. A water-soluble, high boiling organic solvent, a strong base, and a surfactant are combined with water and applied to a heated surface while maintaining the surface at a temperature greater than about 275°F. The heated surface can be rinsed with water or an aqueous solution as soon as is convenient, which may be within a time period of less than about five minutes after the application of the aqueous composition to the heated surface.
