Dislcosed is crystalline (4), 1', 6' TrichlorogalactosuGrose (TGS) having enhanced storage stability, a mean particle size of about (5) microns or less, 90 % particles being less than about (10) microns and the maximum particle size being more than twice the mean but less than about (35) microns; and a process for producing the same comprising gradual cooling of a saturated solution of TGS of a mixture of a a polar alcoholic solvent and a less polar organic solvent, the proportion of the said polar alcoholic solvent being within maintained within a range of about 3 % to 10 % of total volume of the said saturated solution during cooling process.
La présente invention concerne un 4, 1', 6' Trichlorogalactosucrose (TGS)cristallin présentant une stabilité au stockage améliorée, une granulométrie moyenne égale ou inférieure à environ 5 microns, 90% des particules étant inférieures à environ 10 microns et la taille maximale des particules étant supérieure à deux fois la moyenne mais inférieure à environ 35 microns. L'invention concerne également un procédé de production d'un tel sucre comprenant le refroidissement progressif d'une solution de TGS saturée d'un mélange d'un solvant polaire à base d'alcool et d'un solvant organique moins polaire, la proportion du solvant polaire à base d'alcool étant maintenue dans une plage comprise entre environ 3% à 10% du volume total de ladite solution saturée lors du procédé de refroidissement.
