This invention relates to a novel microorganism- derived enzyme having an activity to cut disaccharide glycosides (particularly, .beta.-primeveroside and/or analogous disaccharide glycosides) in disaccharide unit, a method for producing the enzyme, a gene which encodes the enzyme and use of the enzyme. Various components can be formed by the action of this enzyme upon disaccharide glycosides.
Cette invention concerne une nouvelle enzyme d'origine microbienne dont l'activité permet de cliver des glycosides de disaccharides (notamment le beta -primevéroside et/ou des glycosides de disaccharides similaires) dans des unités de disaccharides. Cette invention concerne également un gène codant cette enzyme. Divers composants peuvent être produits en traitant des glycosides de disaccharides ou des glycosides modifiés à l'aide de cette enzyme.
