Disclosed is a novel glycosyltransferase protein produced by an ascomycetous filamentous fungus (preferably a bacterium belonging to the genus Trichoderma, more preferably a bacterium Trichoderma viride). Also disclosed is a gene encoding the glycosyltransferase protein. A particularly preferably example of the novel enzyme protein is one produced from a culture supernatant of Trichoderma viride IAM strain 5141. The solubility of a flavonoid in water can be improved by transglycosylating the flavonoid with the novel enzyme.

La présente invention concerne une nouvelle protéine, une glycosyltransférase produite par un champignon, en l'occurrence par un ascomycète filamenteux (de préférence une bactérie appartenant au genre Trichoderma, et mieux, une Trichoderma viride). L'invention concerne également un gène codant cette glycosyltransférase. Il convient notamment de noter la nouvelle protéine enzymatique produite à partir d'une de surnageant de la souche IAM 5141 de Tricoderma viride. L'enzyme de la présente invention permet, par transglycosilation, d'améliorer la solubilité d'un flavonoïde dans l'eau.
