A phytase having a low Km value against phytic acid; a process for the preparation of the phytase by using a microorganism having the ability to generate and accumulate the phytase; and feed containing the phytase. The novel phytase can hydrolyze phytic acid (acting as antinutritional factor) contained in feed, which brings about an enhancement in the nutritive value of the feed, and permits the efficient utilization of phosporic acid liberated by the hydrolysis.

Phytase ayant une Km faible contre l'acide phytique; procédé permettant de préparer la phytase au moyen d'un micro-organisme capable de produire et d'accumuler ladite phytase; et aliment contenant la phytase. Cette nouvelle phytase peut hydrolyser l'acide phytique (agissant comme facteur antinutritionnel) contenu dans les aliments, ce qui améliore la valeur nutritive dudit aliment et permet l'utilisation efficace de l'acide phosphorique libéré par l'hydrolyse.
