The invention concerns nucleic acid molecules which code for debranching enzymes from maize. The invention also concerns transgenic plant cells and plants in which an amylopectin with altered properties is synthesized owing to the expression of a debranching enzyme from maize or to the inhibition of endogenous debranching enzyme activity of this type.
