The invention relates to nucleic acid molecules which code a branching enzyme from a bacterium of the genus Neisseria, to vectors, host cells, plant cells and plants containing such nucleic acid molecules, as well as to starch which can be obtained from said plants. The invention also relates to an in-vitro method for producing .alpha.-1,6-branched .alpha.-1,4-glucans based on saccharose and an enzyme combination comprised of an amylosucrase and of a branching enzyme. In addition, the invention relates to the .alpha.-1,6- branched .alpha.-1,4-glucans which can be obtained using the method.
L'invention concerne des molécules d'acide nucléique codant une enzyme de ramification d'une bactérie du genre Neisseria, des vecteurs, des cellules hôtes, des cellules végétales et des plantes contenant de telles molécules d'acide nucléique. Elle concerne en outre un amidon pouvant être obtenu à partir des plantes mentionnées. L'invention concerne également un procédé in vitro pour produire des .alpha.-1,4 glucanes ramifiées en .alpha.-1,6 à base de saccharose et d'une combinaison d'enzymes constituée d'une amylosucrase et d'une enzyme de ramification. L'invention concerne enfin une .alpha.-1,4 glucane ramifiée en .alpha.-1,6 obtenue selon ce procédé.
