There is provided isolated nucleic acid fragments that encode soybean seed and zucchini leaf galactinol synthase. Chimeric genes including those fragments and suitable regulatory genes are also provided that are capable of transforming plants to pro- duce galactinol synthase at levels higher or lower than that found in the target plant. Transformed plants and seeds are also pro- vided for. Methods for varying the content of D-galactose-containing oligosaccharides of sucrose in plants are also provided.
