ABSTRACT In a process for a basis: for a beverage, a yogurt, or cheese; which is comprised of an extraction from almonds or other nuts through heat in a mixture of milk and the option of honey (or other sweetener). It is a new product even though comprised of traditional ingredients and methods. The recipe is as follows: 1 part, or 1 cup, of nuts are chopped in a blender or food processor and added to 4 parts, or 4 cups, of milk and 3 teaspoons of honey in a double boiler (or other cooking method). The solution is then covered and cooked for 45 minutes; these are suggested measures and times, for in experimenting substituting 1/2 part of nuts instead of 1 part of nuts that the beverage was too weak. However 1 1/2 parts of nuts cooked to the above directions was ideal for the yogurt but far too strong for a beverage. Please note that honey or any sweetener is optional for cheeses. Once cooked the solution is then passed through a strainer to remove the nuts and is ready to drink, or once cooled to have live yogurt cultures added, or cheese cultures added, and be packaged when ready. The residue of nutmeats can be placed at the bottom of the yogurt cup, or dispersed throughout the yogurt or cheese, or discarded. *These are suggested measures and times.
