A nutrition bar comprising; 10 %wt or more of soy and/or rice protein, at least one transition metal or transition metal or transition metal compound, and 2 %wt or more of a humectant. The transition metal(s) or transition metalcompound(s) are in a substantially water insoluble form at 20 ~C or the nutrition bar has an Aw of 0.45 or less and/or 1 %wt or more of the soy and/or rice protein is in the form of nuggets and the humectant is selected from polyols. The bars hase elevated levels of soy and/or rice protein, yet do not suffer unacceptable from a deterioration in taste or other organoleptic properties over time.
L'invention concerne une barre nutritive contenant au moins 10 % en poids d'une protéine de soja et/ou de riz, au moins un métal de transition ou composé de métal de transition, et au moins 2 % en poids d'un humectant. Le ou les métaux de transition ou composés de métaux de transition sont présents sous forme essentiellement insoluble dans l'eau à 20 ·C ou la barre nutritive présente une activité de l'eau (Aw) de 0,45 ou moins, et/ou au moins 1 % en poids de la protéine de soja et/ou de riz se présente sous la forme de pépites, et l'humectant est choisi parmi des polyols. Les barres selon l'invention présentent des teneurs élevées en protéine de soja et/ou de riz, et ne souffrent pas d'une dégradation du goût ou d'autres propriétés organoleptiques dans le temps.
