Stable oil containing LC-PUFAs in the form of triacylglycerols, in particular arachidonic acid (ARA), dihomogammalinolenic acid (DHGLA), docosahexaenoic acid (DHA) or eicosapentaenoic acid (EPA). Such an oil may be prepared by bringing a carrier oil entering into the composition of a foodstuff, of a cosmetic or pharmaceutical product, into contact with a biomass obtained from the culture of a microorganism, in particular a fungus or a microalga containing the acids ARA, DHGLA, DHA or EPA.

L'invention concerne une huile stable contenant des acides gras poly-insaturés à chaîne longue (LC-PUFA) sous forme de triacylglycérols, notamment un acide arachidonique (ARA), un acide dihomogammalinolénique (DHGLA), un acide docosahexaénoique (DHA) ou un acide eicosapentaénoique (EPA). On peut préparer cette huile par mise en contact d'une huile support entrant dans la composition d'un produit alimentaire, ou d'un produit cosmétique ou pharmaceutique avec une biomasse obtenue à partir de la culture d'un micro-organisme, notamment un champignon ou une micro-algue contenant les acides ARA, DHGLA, DHA or EPA.
