This invention relates to a stable oil-in-water emulsion comprising an oily phase dispersed in an aqueous phase with an emulsifying system. More specifically, the emulsifying system contains an initial ester selected from among the fatty-acid and glucose esters and the fatty-acid and alkylglucose esters, and at least a second fatty-acid and sucrose ester. The emulsion in the invention can be used in the cosmetics field and in dermatology to obtain a skin cream.
