Improved oil-in-water emulsions are provided and a method for their manufacture. In particular, the emulsions comprise a means to control delivery of oil-soluble or water-soluble actives in a core comprising a liquid oil or gel oil continuous phase, which actives can be delivered with improved deposition to surfaces such as, in particular, the skin, gastro-intestinal tract and that defined by the oral cavity. The emulsions are also noted for their improved stability. The stable emulsion comprises a stable droplet dispersed in an aqueous phase, the stable droplet comprising a core, a first inner layer coating the core, and a second outer layer coating the first inner layer, wherein the core comprises at least a liquid oil or gel oil continuous phase, wherein the first inner layer comprises at least one at least partially solid uncharged emulsifier and at least one anionic or cationic or zwitterionic emulsifier, the second outer layer comprises a first polycation or first polyanion or first polyzwitterion of opposing charge to the first inner layer, and wherein the at least partially solid uncharged emulsifier forms a solution in the aqueous phase or the liquid oil phase or the gel oil phase at temperatures greater than room temperature, preferably greater than 40, more preferably greater than 50, even more preferably greater than 60 degrees centigrade. The invention also provides a product selected from the group consisting of a food product, a home care product, a personal care product and a pharmaceutical product, wherein each product comprises emulsion of the invention.
L'invention porte sur des émulsions d'huile dans l'eau améliorées et sur un procédé pour leur fabrication. En particulier, les émulsions comportent un moyen de régulation de distribution de corps actifs solubles dans l'huile ou solubles dans l'eau dans un noyau comportant une phase continue d'huile liquide ou d'huile en gel, lesquels corps actifs peuvent être distribués avec une déposition améliorée sur des surfaces telles que, en particulier, la peau, le conduit gastro-intestinal et celui défini par la cavité buccale. Les émulsions sont également remarquées pour leur stabilité améliorée. L'émulsion stable comporte une gouttelette stable dispersée dans une phase aqueuse, la gouttelette stable comportant un noyau, une première couche interne revêtant le noyau et une seconde couche externe revêtant la première couche interne, le noyau comportant au moins une phase continue d'huile liquide ou d'huile en gel, la première couche interne comportant au moins un émulsifiant non chargé au moins partiellement solide et au moins un émulsifiant zwitterion ou anionique ou cationique, la seconde couche externe comportant un premier poly-cation ou un premier poly-anion ou un premier poly-zwitterion de charge opposée à celle de la première couche interne, et l'émulsifiant non chargé au moins partiellement solide formant une solution dans la phase aqueuse ou la phase d'huile liquide ou la phase d'huile en gel à des températures supérieures à la température ambiante, de préférence supérieure à 40ºC, mieux encore supérieure à 50ºC, et idéalement supérieure à 60ºC. L'invention porte également sur un produit choisi dans le groupe constitué par un produit alimentaire, un produit de soin domestique, un produit de soin personnel et un produit pharmaceutique, chaque produit comportant une émulsion selon l'invention.
