A method has been found for the manufacture of a spread which is characterized by the presence of a substantial amount of olive oil polyphenols and the absence of olive oil odour. The deodorized olive oil to be used for the preparation is obtained by a mild refining process which spares the olive oil's minor components.
Procédé servant à préparer une pâte à tartiner caractérisée par la présence d'une quantité importante de polyphénols d'huile d'olive et par l'absence d'odeur d'huile d'olive. On obtient l'huile d'olive désodorisée à utiliser pour la préparation au moyen d'un procédé de raffinage doux permettant de conserver les constituants mineurs de l'huile d'olive.
