The invention relates to a process for the oxidation of starch, wherein a root or tuber starch comprising at least 95 wt.% of amylopectin, based on dry substance of the starch, is treated with an oxidizing agent and the resulting product is subjected to an alkaline treatment, said treatment comprising keeping the product for at least 15 minutes at a temperature of 20-50 °C and a pH higher than 10. The invention further relates to an oxidized starch obtainable by said process and to various applications of said oxidized starch.

L'invention concerne un procédé d'oxydation de l'amidon, dans lequel de l'amidon de tubercules ou de racines, comprenant au moins 95 % en poids d'amylopectine, par rapport à la matière sèche de l'amidon, est traité à l'aide d'un agent oxydant, le produit résultant étant soumis à un traitement alcalin. Ledit traitement consiste à maintenir le produit pendant au moins 15 minutes, à une température de 20-50 DEG C et un pH supérieur à 10. L'invention se rapporte également à de l'amidon oxydé pouvant être obtenu par ledit procédé et à diverses applications dudit amidon oxydé.
