The invention relates to a process of oxidizing starch wherein a root or tuber starch, comprising at least 95 wt.% based on dry substance of the starch of amylopectin, or a derivative thereof, is treated with hydrogen peroxide in the presence of a catalyst, which catalyst comprises divalent copper ions.

L'invention porte sur un procédé d'oxydation d'amidon dans lequel de l'amidon de racine ou de tubercule, comprenant au moins 95 % en poids d'amylopectine par rapport à la matière sèche de l'amidon, ou un dérivé d'amylopectine, est traité avec un peroxyde d'hydrogène, en présence d'un catalyseur contenant des ions de cuivre bivalents.
