Before the present invention active components of oxygen scavenging systems utilized agents which readily transfer into foods or other packaged products or materials, or which produce oxidation by-products which are known to adversely affect a wide range of packaged materials. The invention provides an oxygen scavenging composition capable of providing good oxygen absorption capabilities wherein the oxygen scavenging agent is a hydroxosulfitometalate, e.g., M I M II2OH(SO3)2.H2O, wherein M I is a monovalent ration and M II is a divalent metal ration. Methods for making a hydroxosulfitometalate are also disclosed.
