A method for the production of a stabilized packaged food product comprising the steps of: filling a tray with a predetermined quantity of a food starting material; introducing the tray into a pressure vessel and conveying the tray through the pressure vessel while performing the following steps in sequence inside the pressure vessel: (i) treating the food starting material with high-temperature pressurized steam to sterilize the material, and (ii) dosing the sterile food material inside said tray with a predetermined amount of sterile water; and (iii) applying a lid to the tray to seal the food product inside the tray while maintaining the tray in a sterile environment. Suitable food starting materials comprise starchy food products, such as rice, wheat or pasta, and/or meat or vegetable pieces. Also provided are an apparatus for performing the method and packaged stabilized full moisture food products obtainable by the process.
La présente invention concerne un procédé de production d'un produit alimentaire emballé stabilisé qui comprend les étapes qui consistent : à remplir un plateau avec une quantité prédéterminée d'une matière première alimentaire ; à introduire le plateau dans un récipient sous pression et transporter le plateau à travers le récipient sous pression tout en réalisant les étapes suivantes en séquence, à l'intérieur du récipient sous pression, qui consistent : (i) à traiter la matière première alimentaire avec une vapeur sous pression à haute température pour stériliser la matière, et (ii) à doser la matière alimentaire stérile à l'intérieur dudit plateau avec une quantité prédéterminée d'eau stérile ; et (iii) à appliquer un couvercle sur le plateau pour sceller le produit alimentaire à l'intérieur du plateau tout en maintenant le plateau dans un environnement stérile. Des matières premières alimentaires appropriées comprennent des produits alimentaires amidonnés, tels que le riz, le blé ou les pâtes, et/ou des morceaux de viande ou légume. La présente invention concerne également un appareil pour réaliser le procédé et des produits alimentaires emballés stabilisés à humidité complète qui peuvent être obtenus grâce au procédé.
