IMPROVED PALATABILITY IN INTERMEDIATE-MOISTURE ANIMAL FOODS ABSTRACT OF THE DISCLOSURE An improved process for preparing a shelf-stable, intermediate-moisture animal food which contains meaty materials normally capable of supporting microbial growth and which util- izes effective levels of preservatives to obtain microbiological stability. Improved palatability is obtained by reducing the severity of the pasteurization step, especially by employing steam to directly heat the meaty material, alone or with the other pet food ingredients. Preferably, pasteurization is accomplished in a continuous, extruder-cooker wherein steam is injected to raise the temperature to a maximum of 170°F. during a residence time for the product of from 30 to 90 seconds.
