Palatable compositions are disclosed which are useful as salt substitutes comprising calcium ascorbate as the major component in combination with minor constituents including sodium chloride, sodium ascorbate, free ascorbic acid and potassium chloride. The palatable compositions are characterized by an appealing salt-like taste and have a pH in aqueous solution preferably in the range of about 4 to about 5.

L'invention porte sur des compositions agréables au goût, utiles comme succédanés du sel. Elles renferment de l'ascorbate de calcium comme principal constituant, combiné à divers ingrédients mineurs, notamment le chlorure de sodium, l'ascorbate de sodium, l'acide ascorbique libre et le chlorure de potassium. Ces compositions rappellent le goût du sel, et leur pH en solution aqueuse se situe de préférence aux environs de 4 à 5.
