Parfried food products low in free fatty acid and polymers and a method for extending the fry-life of an edible oil during the finishing process. The parfried foods are suitable for oven finishing or deep-fry finishing. When the parfried food is finished by deep fat frying the fry-life of the finishing oil is extended. The parfried food products are produced by frying raw food products in used oil in which the free fatty acid, polymers and tocopherol content of the oil is controlled.
Cette invention concerne des produits alimentaires semi-frits à faible teneur en acides gras libres et en polymères et décrit un procédé permettant de prolonger la durée d'utilisation en friture d'une huile comestible pendant la phase d'apprêt. La cuisson des aliments semi-frits peut être terminée au four ou en grande friture. Le fait de terminer en grande friture la cuisson des aliments semi-frits prolonge la durée d'utilisation de l'huile d'apprêt. Les produits alimentaires semi-frits s'obtiennent en faisant frire des denrées alimentaires crues dans de l'huile usagée dont la teneur en acides gras libres, en polymères et en tocophérol est contrôlée.
