ABSTRACT This invention relates to partially methylated cyclo- dextrins with enhanced solubility in water wherein the average degree of methylation at hydroxyl groups of different positions in all the glucose units involved is at least 90% for 2-position, 25 to 35% for 3-position, and at least 95% for 6-position, when measured by 13C-NMR analysis, and to a process for producing the same.
