A method and apparatus for implementing pathogen reduction within a poultry processing or food processing plant that uses water that has been treated with chloramines at an advantageous dosage before being introduced to the production process at processing steps. The water treated with chloramines may be from a fresh water source or reclaimed water from the processing plant. The reintroduction of the treated reclaimed water advantageously causes a dramatic reduction in the levels of microorganisms associated with poultry processing, while substantially conserving water use.

L'invention concerne une méthode et un appareil permettant de mettre en place une diminution des agents pathogènes au sein d'une usine de transformation d'aliments ou de volaille qui utilise de l'eau traitée antérieurement avec des chloramines à un dosage avantageux avant d'être introduite dans le processus de production au niveau des étages de transformation. L'eau traitée avec des chloramines peut provenir d'une source d'eau fraîche ou d'une eau épurée de l'usine de transformation. La réintroduction de l'eau épurée traitée permet d'engendrer de façon avantageuse une diminution considérable des niveaux de micro-organismes liés au traitement de la volaille, tandis que l'utilisation d'eau se fait avec modération.
