The present invention describes a composition suitable for use in wine comprising at least 2.5% of a peptide mixture based on dry weight characterized in that the peptides have a molecular weight between 3 kDa and 10 kDa. The composition or a solution thereof can be advantageously used to stabilise wine, in particular to prevent or retard the formation of tartrate salts in the wine.

L'invention concerne une composition adaptée pour une utilisation dans les vins et qui comprend au moins 2.5 % d'un mélange peptidique sur la base du poids sec, caractérisée en ce que les peptides ont un poids moléculaire entre 3 kDa et 10 kDa. La composition ou une de ses solutions peuvent être utilisées avantageusement pour stabiliser les vins, en particulier pour empêcher ou retarder la formation de sels tartrates dans les vins.
